Almond Jaffa Cake

Ingredients

1 large Orange
125 grams (4 ounces) butter
1 cup self-raising flour
3 eggs
1 cup caster sugar
110 gram (4 ounces) packet Almond meal
Icing Sugar to decorate
Double Cream to serve
Chocolate Sauce

200 grams (7 ounces) Dark eating Chocolate
1 cup thickened Cream
Instructions

Grease a 22cm (8 inch) pan. Line base and side with baking paper. Cut
unpeeled orange into quarters. Place in food processor. Process until
finely chopped. Add butter, eggs, sugar, flour and almond meal. Process
until well combined. Spoon mixture into prepared pan and smooth surface.
Cook in a moderate oven (180 degrees Celsius or 350 degrees Fahrenheit)
for about 55 minutes, or until cooked when tested with a pin. Stand cake
in pan for 5 minutes before turning out onto a wire rack to cool slightly.
Combine chocolate and cream in a heatproof bowl over simmering water. Stir
until chocolate is melted and smooth. Serve cake warm and dusted with
sifted icing sugar, chocolate sauce and double cream.
