Chapati Flatbread

Ingredients

3/4 Cup whole-wheat Flour
3/4 cup high-grade white flour
Pinch of salt
1/2 Cup cold water (approximate)
Extra flour to roll

Instructions (makes ten Chapatis)

Place flour & salt in a large bowl, then add the 1/2 cup of water and mix
by hand until the dough is the texture of chewing gum - adding more water
in small amounts to mix to the right consistency. Form the mixture into
ping-pong sized balls and roll in flour. Use a rolling pin on a lightly
floured surface to roll each portion into a thin circle. Dust with more
flour and leave in a pile. Heat a hot plate or small skillet frying pan
and cook one piece at a time for a few minutes until browned, then turn
over and cook on the other side (the bread will bubble and then puff up).
Pile the cooked bread up on a plate while completing rolling and cooking
remaining chapati.

Chapatis go well with curry & may be brushed with garlic butter or used as
pizza bases. They may be substituted for tortillas when making sandwich
wraps. Two chapatis may be filled with cheese etc & pan-fried to make a
toasted sandwich.
